Pumpkin Muffins

Like a kitten on your lap, these muffins are sweet, warm, and perfectly spiced.

Ingredients

1/2 can pumpkin
3 eggs
1/2 cup vegetable oil
1/3 cup water
2 cup white sugar
1 1/2 cup flour
3/4 cup oats
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger

Directions

1. Preheat oven to 350 degrees Farenheit. Grease and flour muffin tins.

2. In a large bowl, mix together pumpkin puree, eggs, oil, water, and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. 

3. Bake for about 50 minutes. Loaves are done when toothpick inserted in center comes out clean.
