Magic Chocolate Peanut-Butter No Bake Cookies

This cookie might actually be close to healthy!

Note: We love to have a good, quick, simple wholesome cookie recipe around to treat ourselves or celebrate special occasions. This recipe can be incredibly healthy if you use wholesome, well-raised ingredients. The better the ingredients you use, the healthier this becomes. If possible, use local milk and butter from well-raised cows, use peanut butter without any additives (just peanuts, please!), and use organically grown sugar, cocoa, and oats. God forbid we should say...this cookie might actually be close to healthy!

Equipment 

Saucepan
Whisk
Wood spoon
Wax paper
Cookie sheet/cutting board/large flat surface

Ingredients

2 cups sugar
4 tablespoons cocoa
1 stick butter (8 oz.)
½ cup milk (whole if possible)
1 cup peanut butter (natural if possible)
1 tablespoon vanilla
1 tablespoon cinnamon
3 cups oatmeal
Powdered sugar to top

Directions

  1. In a heavy saucepan, bring to a boil the butter, and milk. Let boil for 1 minute.

  2. Whisk in the cocoa and sugar until well blended. (Make sure to get rid of all the chunks)

  3. Then, add peanut butter, vanilla, oatmeal, and cinnamon and let cook for another minute.

  4. Turn off the heat and drop the mixture by the spoonful in the size you want onto the wax paper. Let cool and harden.

  5. Dust the tops of the cookies with a bit of powdered sugar and enjoy!
