Recipes: some Edible Schoolyard New Orleans favorites

Holy Basil Vinegar

Holy Basil (Tulsi) is useful in treading colds, coughs, asthma, bronchitis, sinusitis, headaches, arthritis, diabetes, stress, and anxiety! We grow a lot of Holy Basil at Arthur Ashe Charter School.

Category: Herbs & Medicines: Salads

1 bottle of balsamic vinegar
1 cup of packed fresh holy basil leaves

Chop up or mash the leaves to help release the volatile oils. Put in a glass jar big enough for your bottle of vinegar and the leaves. Cover the leaves entirely with the vinegar. Cover, and put in a dark cabinet for 4-6 weeks. Be sure to occasionally give it a shake and a taste. When you have a taste you like, strain the leaves and rebottle. Enjoy!
